Savingdinner.com is a wonderful site with lots of wonderful menus. I have subscribed to Saving Dinner for a couple of years now and bought many different things from them. I always seem to make up a meal now and again, though:).
Today, Coconut woke up vomitting. She said she was feeling better right afterward, so I still gave her breakfast. Hearty, easy, and satisfying: a bowl of cheerios.
Cheerio and milk urping about 30 min after said bowl...
About two hours later, I took the trip to Walmart I'd been planning on making after church. She said she was feeling so much better and she had been playing very well with Peanut. We picked up a friend and her daughter, who don't have a car, and brought them along so they could get the shopping done that they needed. Coconut urped a tiny bit on the way, but I attributed it to the motion of the car as she has been known for motion sickness.
OK, Walmart went well and we got the few things we needed and came home. She was so sleepy when Peanut's naptime rolled around that I had her try to nap too. Peanut slept for an unusually short one hour:(. Coconut, however, who hasn't napped in almost a year, slept for THREE!
She woke up feeling wonderful and with a HUGE smile on her face.
For supper I wanted to make something that wouldn't be too harsh on the tired tummy. I immediately thought of chicken noodle soup, of course.
I saw some ramen at the top of the pantry and decided that it would be a nice change of pace.
I pulled out a can of salmon to contribute to the protein for her health and a can of pineapple tidbits for a little sweetness.
After making the ramen, I drained off most of the water and added only part of the seasoning packet. I put a little bit of fresh spinach and topped it with some pineapple. Lastly, I put some of the canned salmon on the top. I suppose you could also sprinkle on some coconut and cashews if you have them and it would make a wonderfully Hawaiian meal.
The kids just ate it up! I loved it! Yum yum and win for all. What a nice finish to a rough day:).
